Garam masala, an aromatic mixture of spices of spices like , cardamom, clove, cinnamon,fennel, and a bit of star anise makes this great mix to flavaour the Indian dishes .The Pimenta style of Garam Masala contains only the above spices. We will toast all the spices in a low flame just to make the molecules of the oleoresins to dance in the spices but do not escape because of overheat and this gives a great fragrance to what you make in the kitchen using this .

In all our Cooking Programs we start with the spice foundation of the Indian Dish. This spice mix can be compimented with other spices like Black Pepper , Black Cardamom , Cumin , Ginger , Bay leaves , Turmeric , Dry Ginger , Coriander seeds in some other combination .

Here is the recipe for it

Equal amount of 1 Tbsp Cardamom ,1 Tbsp Clove , 1 Tbsp Cinnamon and !/2 tbsp of Fennel and 1 tsp of star Anise . All these should be toasted in a dry pan and on a slow fire and when you feel the aroma comes out remove from the fire and cool it . When cool in a clan coffee grinder grind it to a fine powder or next to it . When cool store in a glass bottle with a tight lid and store in a refrigerator and use when you cook .

Cloves are considered a great panacea for tooth problems in Ayurveda. They reduce toothache and decay. Cloves are also great antioxidants and have calcium, vitamins, and omega 6 fatty acids.

Many of the ingredients in garam masala, like cinnamon and pepper slow down the ageing process. They also have cancer-fighting properties and black pepper can help keep your weight down too by curbing your appetite and boosting your metabolism. Pepper is also good for your skin.
