Learn to Cook the Way
We Actually Cook.

Cooking at The Pimenta

Cooking is at the heart of a stay at The Pimenta. This isn't a demonstration where you watch from a stool — you're at the stove, hands in the dough, working through dishes with Jacob right beside you. The chopping, grinding, and cleanup are taken care of in advance, so your time in the kitchen goes to the part that matters: learning how the dish actually comes together.

What You'll Learn

You won't just come away with a few recipes — you'll start to understand why Kerala cooking works the way it does. How a tempering changes a dal from flat to alive. Why some batters need a day to ferment and others don't. How to read a curry by smell before you ever taste it.

Jacob builds the sessions around dishes you actually want to cook — a full Sadhya spread, everyday curries and sambars, the fermented classics like dosa, idlis, and appam — but the goal each time is the same: that you leave able to cook it again on your own, not just remember watching it happen.

How It Works

You'll usually cook before lunch or dinner and sit down to eat what you've made. Jacob guides you through each step and explains the why behind it — when to let a spice bloom slowly and when to hit mustard seeds with heat to get them crackling — rather than just walking you through a recipe card.

Recipes to Take Home

Every dish comes with a recipe you keep printed in the kitchen while you cook, and yours to take home afterward, so you can make it again once you're back.

Where the Ingredients Come From

Much of what goes into the pot comes from our own spice garden and the growers and markets nearby. Jacob usually knows exactly where an ingredient came from and is happy to talk you through it.

Beyond the Stove

Cooking sessions are often paired with a walk through the garden to see the spices growing, and — for guests who want to take a tool home — a trip to the local shops for a brass uruli, a coconut scraper, or cast iron.

Our food is vegetarian, with vegan options and Ayurvedic meals available on request. Let us know your requirements before you arrive. Capacity is limited to eight guests unless it's a group booking.
